Bacal extravergine Trieste Mack Parovel

At Christmas' Eve we all get together and on our table we always place salt cod purée and mashed savoy cabbages.

Ingredients for 4/6 people
1 kg salt cod softened in the water
½ L extra virgin olive oil Mackè
2 garlic peeled cloves
salt
pepper

Fill a large pot with water. Bring the water to a boil, add salt and dip the cod. Cover and cook for a few minutes. Drain, allow to cool and clean the cod with your hands, removing all bones. Place the cod in the bowl of a planetary cooker. In a saucepan, heat the extra virgin olive Mackè. When it starts to be hot and to "make bubbles", dip the cloves of garlic and let them fry until they take on a yellowish color. At this point, remove the garlic . In the bowl of the planetary cooker, pour the hot oil over the cod. Cover with a lid and let stand for 5 minutes. Fit the steel whip of the planetary cooker and let it whisk the mixture of oil and cod at low speed, for about an hour. After this time gradually increase the speed of the planetary cooker to work at very high speed for the last 5-10 minutes. If necessary, add more hot oil to achieve the desired consistency. Season with salt and pepper and serve with croutons.
