Ingredients for 4/6 people
60 ml extra virgin olive oil Mackè
4 full tablespoons of '00' flour
2 L of vegetable broth
5 minutes of chatting on the phone to invite friends to lunch
Prepare the roux or disfrito: Place the olive oil Mackè in a large saucepan and add flour. Cook for 5-10 minutes, stirring constantly with a wooden spoon, until the mixture has taken on a nice brown color. Heat the broth and add it to the disfrito very slowly, stirring well to avoid lumps. Allow to boil for 30 minutes. Beat the eggs with a pinch of salt and a little pepper. Lower the heat and pour the eggs into the boiling broth, stirring with a fork without ever stopping. Cook a few more minutes and serve with croutons.
