The new vintage of our mono-varietal Bianchera Ul'ka will be available from early March which this year received the nomenclature of the Tergeste DOP brand and the recognition of the Slow Food Presidium. Our pride is the fact that it has been chosen by two starred chefs in Italy.
Little curious note: over the years our Ul'ka has managed to reach even 1089 mg / kg! The 2018 vintage is characterized by a strong balance between bitterness and spiciness.
The sun came out and so we are in the country to prune!
The pruning phase is very important, it allows us to study the plant, fortify it, to act on its ability to develop and produce grapes. The work will keep us busy for two months and we hope that the sun and rain will accompany us in a balanced way.
We enjoy the winter sunsets and plan the summer ones. In fact, in summer we organize tastings in the vineyard for groups as the evening draws in, blankets and lanterns keep us company between vines and olive trees where we tell our story and offer native wines and extra virgin olive oil to taste

The beginning of the new Chinese year is celebrated tonight and also we Parovel, as per tradition, wish the best to all our chinese friends around the globe that follow our activities and love our products!

The countryside in winter is very fascinating and occasionally we go for a walk among Parovel's rows of vineyards and olive trees with the dogs early in the morning or in the evening at sunset.
While the countryside is resting we do not rest at all! Reinvigorated by the Christmas break it is time to work in the cellar, prepare for the agricultural year, study, get updated and prepare the new 2018 bottles of extra virgin olive oil!
